Foods that have a high glycemic index (70 and over) are those which can be rapidly digested and absorbed and result in marked elevations in blood sugar levels. Foods with high glycemic index values are useful for dietary variety and for replenishing muscle fuel stores after strenuous exercise. High glycemic indexed foods are also useful for people with diabetes who have low blood glucose levels after too much insulin. The high glycemic index foods can quickly bring blood glucose levels back to a normal level.
